Chef Barrila creates fresh pasta on the Emiliomiti machine with a rich variety of Italian pasta shapes. It is in his labaratory where various quantities and samples of flour were tried and tested, mixing slowly with the finest, world-renowned water that is New York City tap. The dough that comes out in various forms or shapes before nestling gently into a pair of flour-dusted hands. That pasta is then flash-boiled to order, delicately sautéed and then plated. It was this cohesive union of Machine and Man creating something beautiful that we had to bring to you. Experience Rome through our pizza alla pala – All of our traditional pizzas are handmade in two exposed ovens with fresh, top-quality ingredients. We use only the finest products to create our delicious Roman-style “alla pala” (crispy base, soft interior) pizzas. The dough is crafted from a blend of artisanal Italian and American white and whole wheat flours, then left to rise for a full 36 hours, resulting in a crust that is light, fluffy and full of flavor. The union of the best tomatoes and extra virgin olive oil along with our special combination toppings brings Italian excellence of pizza right here in the heart of East End.
